There are several easy ways to adjust this casserole without changing its basic character.
For a milder flavor, substitute some or all of the cheddar with Monterey Jack or Colby Jack. If you prefer a stronger cheese flavor, extra-sharp cheddar is an excellent choice.

The casserole can also be frozen for up to about 2 months. Potatoes may become somewhat softer after freezing and thawing, but the dish will still be enjoyable.
Whenever possible, thaw frozen portions overnight in the refrigerator before reheating.

No. Canned corned beef is already cooked.

Usually, I don't recommend adding salt right away.
