Chocolate Rice Krispie Balls

 


  1. Make the filling:
    In a mixing bowl, combine peanut butter, butter, and vanilla until smooth. Stir in Rice Krispies, pecans, and shredded coconut.

  2. Chill and shape:
    Refrigerate the mixture for at least 30 minutes. Once firm, roll into small balls. Return to the fridge and chill for at least 1 hour.

  3. Prepare the chocolate coating:
    In a double boiler, gently melt together:

    • 1 package of chocolate chips

    • 1 square of sweet chocolate
      Keep the heat low to maintain a smooth, pourable texture.

  4. Coat the balls:
    Using a fork, dip each ball into the melted chocolate, rolling to fully coat. Place on parchment paper and refrigerate until set.
