Instructions
1. Prepare the Oven
Preheat your oven to 325°F (163°C). Grease and flour a 10-inch tube or Bundt pan.
2. Cream Butter and Shortening
Using an electric mixer, beat the butter and shortening at medium speed until smooth and creamy.
3. Add the Sugar
Gradually add the sugar while mixing. Continue beating until the mixture becomes light and fluffy.
4. Incorporate the Eggs
Add the eggs one at a time, mixing just until each egg is fully incorporated.
5. Mix Dry Ingredients
In a separate bowl, combine the flour, baking powder, and salt.
6. Alternate Flour and Milk
Add the flour mixture to the batter in stages, alternating with the milk. Start and finish with the flour mixture. Mix on low speed just until everything is combined.
7. Add Flavor
Stir in the vanilla extract, lime zest, and key lime juice.
8. Fill the Pan
Pour the batter into the prepared pan and smooth the top.
9. Bake
Bake for 1 hour 15–20 minutes, or until a toothpick inserted into the center comes out clean.
10. Cool Slightly
Allow the cake to cool in the pan on a wire rack for 10–15 minutes.
11. Prepare the Glaze
In a small bowl, mix together the powdered sugar, key lime juice, and vanilla extract until smooth.
12. Remove the Cake
Carefully remove the cake from the pan.
13. Glaze the Cake
While the cake is still warm, brush the glaze over the top and sides so it can soak into the cake.
14. Cool Completely
Let the cake cool completely—about 1 hour—before slicing and serving.
