2 pounds (900 g) baby potatoes or small Yukon Gold potatoes
1 medium onion, thinly sliced
4 tablespoons butter, melted
1 tablespoon olive oil (optional)
1 teaspoon garlic powder
1 teaspoon dried parsley
½ teaspoon salt (or to taste)
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley (optional, for serving)
