1️⃣ SEASON THE PORK
Pat the pork chops dry and season both sides with salt, pepper, and onion powder.
2️⃣ QUICKLY BROWN THEM
Heat the olive oil in a skillet over medium-high heat.
Brown the pork chops for about 2 minutes per side. You don't need to cook them through—the slow cooker will finish the job.
3️⃣ BUILD THE GRAVY
Place the sliced onions and garlic in the bottom of your crockpot.
Whisk together the cream of mushroom soup, broth, and thyme, then pour the mixture over the onions.
4️⃣ ADD THE PORK CHOPS
Nestle the browned pork chops into the gravy and onions.
Cover and cook on LOW for about 4–5 hours, or until the pork reaches a safe internal temperature and is tender.
5️⃣ THICKEN THE GRAVY
If you'd like a thicker gravy, remove the pork chops and stir in the cornstarch slurry.
Cover and cook on HIGH for about 10–15 minutes, stirring until thickened.
6️⃣ SERVE IT UP! 🥔
Spoon plenty of that onion gravy over the pork chops and serve with creamy mashed potatoes, rice, or noodles.
