🍝🍷 Italian Drunken Noodles — Rich, Savory & Absolutely Delicious!

 


🛒 What You’ll Need

🍝 12 oz wide egg noodles or pappardelle

🌭 1 lb Italian sausage, casings removed

🫑 2 bell peppers, thinly sliced

🧅 1 medium onion, thinly sliced

🧄 3 cloves garlic, minced

🍅 1 can (14.5 oz) diced tomatoes

🍷 ½ cup dry red wine

🥣 ½ cup chicken broth

🫒 2 tablespoons olive oil

🌿 1 teaspoon Italian seasoning

🌿 ½ teaspoon dried oregano

🧂 Salt and black pepper, to taste

🌿 Fresh parsley, for garnish

🧀 Grated Parmesan, for serving

👩‍🍳 How to Make It

1️⃣ Cook the noodles. 🍝

Cook the pasta according to the package directions until al dente. Reserve about ½ cup of the pasta water, then drain.

2️⃣ Brown the sausage.

Heat the olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it apart, until browned and cooked through.

3️⃣ Add the vegetables. 🫑🧅

Add the sliced peppers and onions. Cook for about 5–7 minutes, until they begin to soften.

4️⃣ Add the garlic. 🧄

Stir in the garlic and cook for about 30 seconds, just until fragrant.

5️⃣ Pour in the wine. 🍷

Add the red wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for about 2–3 minutes.

6️⃣ Build the sauce. 🍅

Add the diced tomatoes, chicken broth, Italian seasoning, and oregano. Season with salt and pepper. Simmer for about 8–10 minutes, allowing the flavors to come together.

7️⃣ Add the noodles. 🍝

Toss the cooked pasta into the skillet. Add a splash of reserved pasta water if the sauce needs loosening.

8️⃣ Finish and serve. ✨

Top with fresh parsley and plenty of grated Parmesan. Serve hot!

💡 A Little Tip

Don't skip scraping the bottom of the skillet after adding the wine. Those browned bits from the sausage are packed with flavor and help make the sauce taste rich and savory.

If you prefer not to use wine, you can substitute additional chicken broth, though the flavor will be a little different.
