🍚🥛 SLOW COOKER RICE PUDDING — CREAMY, COMFORTING & OLD-FASHIONED! 🥛🍚

 


🛒 WHAT YOU’LL NEED

🍚 1 cup uncooked long-grain white rice

🥛 4 cups whole milk

🍬 1/2 cup granulated sugar

🧈 2 tablespoons butter

🥚 2 large eggs

🌿 1 teaspoon vanilla extract

🧂 1/4 teaspoon salt

🍂 1 teaspoon ground cinnamon

🍇 1/2 cup raisins, optional

👩‍🍳 HOW TO MAKE IT

1️⃣ Start the pudding

Lightly grease your slow cooker. Add the rice, milk, sugar, butter, salt, cinnamon, and raisins if using. Stir well.

2️⃣ Let it cook

Cover and cook on LOW for about 2½–3½ hours, stirring occasionally, until the rice is tender and the mixture is creamy.

3️⃣ Add the eggs carefully

In a small bowl, whisk the eggs and vanilla together. Slowly whisk in about 1 cup of the hot rice mixture to temper the eggs.

4️⃣ Finish cooking

Stir the egg mixture back into the slow cooker. Cover and cook on LOW for another 15–20 minutes, stirring once or twice, until thickened and the eggs are cooked through.

5️⃣ Let it rest

Turn off the slow cooker and let the pudding stand for about 10 minutes. It will continue to thicken as it cools.

6️⃣ Serve and enjoy!

Spoon into bowls and sprinkle with a little extra cinnamon. Serve warm, or refrigerate and enjoy it cold. 😋

Rice pudding thickens as it cools, so don't worry if it looks slightly looser when it first finishes cooking. If it becomes too thick after refrigeration, simply stir in a splash of milk before serving.
