🥣🥩 Vegetable Beef Soup — A Big Pot of Old-Fashioned Comfort!

 


🛒 What You’ll Need

🥩 1½ lbs beef stew meat, cut into bite-sized pieces

🧅 1 medium onion, diced

🥕 3 carrots, sliced

🌿 2 celery stalks, sliced

🥔 3 medium potatoes, peeled and cubed

🍅 1 can (14.5 oz) diced tomatoes

🫘 1 cup green beans, cut into pieces

🌽 1 cup corn, fresh or frozen

🥣 6 cups beef broth

🍅 2 tablespoons tomato paste

🧄 2 cloves garlic, minced

🧂 1 teaspoon salt

🌑 ½ teaspoon black pepper

🌿 1 teaspoon dried thyme

🍃 1 bay leaf

🫒 2 tablespoons olive oil

👩‍🍳 How to Make It

1️⃣ Brown the beef.

Heat the olive oil in a large soup pot over medium-high heat. Season the beef with salt and pepper, then brown it in batches. Don't worry about cooking it through yet—that beautiful browning adds tons of flavor!

2️⃣ Sauté the aromatics.

Add the onion, carrots, and celery to the pot. Cook for about 4–5 minutes, then add the garlic and cook for another minute.

3️⃣ Build the broth.

Stir in the tomato paste, then pour in the beef broth and diced tomatoes. Add the thyme and bay leaf.

4️⃣ Add the beef back in.

Return the browned beef and any accumulated juices to the pot.

5️⃣ Let it simmer.

Bring everything to a gentle boil, then reduce the heat, cover, and simmer for about 1 to 1½ hours, or until the beef is becoming tender.

6️⃣ Add the potatoes and remaining vegetables.

Stir in the potatoes, green beans, and corn. Continue simmering for another 20–30 minutes, until the vegetables are tender and the beef is fork-tender.

7️⃣ Taste and adjust.

Remove the bay leaf. Taste the soup and add more salt or pepper if needed.

8️⃣ Serve it piping hot! 🥣

Ladle into big bowls and serve with warm crusty bread, biscuits, or cornbread for dipping. 🥖❤️
