✨ CHEESY CHICKEN QUESADILLAS ✨

→ LET'S MAKE THEM! ♥

1. PREPARE THE FILLING

Heat the olive oil in a skillet over medium heat. Add the diced bell pepper and onion, cooking for 3–4 minutes until softened.

Stir in the cooked chicken, taco seasoning, garlic powder, and a little black pepper. Cook for another 2–3 minutes until everything is heated through. Taste and adjust the seasoning as needed.

2. BUILD YOUR QUESADILLAS

Lay the tortillas flat. Sprinkle cheese over one half of each tortilla, then add a layer of the chicken mixture.

Top with another generous sprinkle of cheese. The cheese helps hold the filling together when it melts!

Fold each tortilla in half to cover the filling.

3. COOK UNTIL GOLDEN

Heat a clean, lightly oiled skillet over medium heat. Place one folded quesadilla in the pan and cook for about 2–3 minutes per side, pressing gently with a spatula.

Flip carefully and cook until both sides are golden brown and the cheese is completely melted. Repeat with the remaining quesadillas.

4. LET THEM REST

Transfer the cooked quesadillas to a cutting board and let them rest for 1–2 minutes. This makes them easier to slice and helps keep the filling inside.

5. SLICE AND SERVE

Cut each quesadilla into wedges and arrange them on a serving plate.

Serve warm with salsa, sour cream, or guacamole for dipping. Every bite is crispy on the outside, cheesy in the middle, and packed with delicious chicken flavor! ♥

✧ LITTLE SECRETS FOR THE BEST QUESADILLAS

★ Use freshly shredded cheese. It melts beautifully and gives you that wonderful cheesy stretch.

★ Don't overfill. Too much filling can make the tortillas difficult to flip and cause the ingredients to spill out.

★ Keep the heat at medium. This allows the cheese to melt before the tortillas become too dark.

★ Make them your own. Add corn, black beans, sliced jalapeños, or a pinch of smoked paprika for extra flavor.

★ Use leftover chicken. Rotisserie chicken works wonderfully and saves valuable prep time.

♥ MAKE-AHEAD & STORAGE TIPS

✓ Prepare ahead: Cook and season the chicken mixture up to 2 days in advance. Refrigerate it in an airtight container.

✓ Refrigerate leftovers: Store cooked quesadilla wedges in the refrigerator within 2 hours and enjoy within 3–4 days.

✓ Reheat for crispness: Warm in a skillet over medium-low heat or in an air fryer until hot throughout. The microwave works too, but the tortillas may soften.

✓ Freeze for later: Freeze individually wrapped quesadillas for up to 2 months for best quality. Thaw in the refrigerator before reheating.
