Preheat & Prep: Heat the oven to 350°F (175°C). Line a 13×9-inch baking pan with parchment paper.

Layer the Phyllo: Take 2 sheets of phyllo at a time, fold them accordion-style, and place them in the prepared pan. Repeat until all phyllo dough is used.

Initial Bake: Bake for 10 minutes, then remove and drizzle with melted butter. Return to the oven and bake another 10 minutes.

Prepare the Egg Mixture: While the phyllo bakes, whisk together eggs, vanilla, milk, and salt in a large bowl until smooth.

Assemble the Cake: Nestle pear slices and brie pieces into the crinkled phyllo, sprinkle with thyme, then pour the egg mixture evenly over the top.

Final Bake: Bake until the top is golden and set, about 30–40 minutes.
