How to Make Mama’s Old-Fashioned Potato Salad

Step 1: Cook the Potatoes

Peel the potatoes and cut them into 1-inch cubes. Place them in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook for about 7–8 minutes, checking around the 5–6 minute mark to ensure they are tender but not overcooked. Drain the potatoes, rinse with cold water, and allow them to drain well.

Step 2: Prepare the Egg Mixture

While the potatoes are cooling, combine the chopped onions and hard-boiled eggs in a bowl and set aside.

Step 3: Mix the Dressing

In another bowl, combine the sweet pickles, dill pickles, celery, salt, pepper, mustard, and mayonnaise. Stir until well blended.

Step 4: Combine Ingredients

Once the potatoes have cooled, gently fold them together with the onion and egg mixture.

Step 5: Add the Dressing

Gradually mix in the mayonnaise dressing, folding gently so the potatoes keep their shape. You may not need all the dressing—add just enough to reach your desired creaminess. If the salad seems dry, add a little more mayonnaise.

Step 6: Garnish and Serve

Top the potato salad with sliced hard-boiled eggs and a sprinkle of paprika if desired.
