Ingredients

For the Cake

  • 1 cup quick oats

  • 1 ¼ cups boiling water

  • ½ cup unsalted butter

  • 1 cup white sugar

  • 1 cup light brown sugar

  • 1 ⅓ cups all-purpose flour

  • 3 large eggs

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 tsp cinnamon

  • 1 tsp pure vanilla extract

For the Topping

  • 1 cup light brown sugar

  • 1 cup shredded coconut

  • ½ cup half & half

  • 4 tbsp unsalted butter

Instructions
