In a stand mixer, beat the butter and eggs on medium speed for 1 minute. Add both sugars and vanilla, mixing until light and creamy. On low speed, gradually add half the flour, followed by the soaked oats, and finish with the remaining flour. Mix just until combined.
Step 4: Bake the Cake
Pour the batter into the prepared pan. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Step 5: Make the Coconut Topping
While the cake is still hot, combine the brown sugar, half & half, and butter in a saucepan over medium heat. Bring to a boil, then remove from heat and stir in the shredded coconut.
