1️⃣ Toast the Pecans
Preheat your oven to 350°F (175°C).
Spread the pecans on a baking sheet and toast for about 7–9 minutes, just until fragrant.
Let them cool slightly.
That little bit of toasting makes the pecan flavor even better. 🌰✨
2️⃣ Make the Pecan Clusters
Arrange small groups of pecans on a parchment-lined baking sheet.
Think of each group as the little “turtle” base.
Leave enough space between them so they don't stick together.
3️⃣ Melt the Caramel
Place the unwrapped caramels and heavy cream in a saucepan over low heat.
Stir frequently until completely melted and smooth.
Don't rush this step—low and slow helps keep the caramel silky. 🍯
4️⃣ Add the Caramel
Spoon a little melted caramel over each pecan cluster.
Let it gently spread over the nuts.
Allow the caramel to cool for a few minutes so it can begin to set.
5️⃣ Melt the Chocolate
Melt the chocolate chips gently in the microwave in 20–30 second intervals, stirring between each one.
Continue until smooth and glossy.
6️⃣ Cover With Chocolate
Spoon the melted chocolate over each caramel-and-pecan cluster.
You don't have to make them perfectly neat.
The rustic ones always seem to disappear first! 😂🍫
If you love that sweet-and-salty combination, sprinkle just a tiny bit of sea salt over the tops.
7️⃣ Let Them Set
Place the tray in the refrigerator for about 30 minutes, or until the chocolate and caramel are firm.
Then peel them from the parchment and try not to eat one immediately.
