🛒 WHAT YOU’LL NEED
🌽 4 cups corn kernels, fresh, frozen, or canned and drained
🧀 8 oz cream cheese, softened
🧈 4 tablespoons butter, melted
🥛 ½ cup milk
🧀 1 cup shredded cheddar cheese
🧂 ½ teaspoon salt
🌶️ ½ teaspoon black pepper
🧅 ½ teaspoon onion powder
1️⃣ PREHEAT THE OVEN
Preheat your oven to 350°F.
Lightly grease a 9x9-inch or similar baking dish.
2️⃣ MAKE THE CREAMY MIXTURE
In a large bowl, beat together the softened cream cheese, melted butter, and milk until smooth.
Stir in the salt, pepper, and onion powder.
3️⃣ ADD THE CORN
Fold in the corn and ½ cup of the shredded cheddar cheese.
Mix until everything is evenly coated.
4️⃣ FILL THE BAKING DISH
Spread the mixture evenly into your prepared baking dish.
Sprinkle the remaining cheddar cheese over the top. 🧀✨
5️⃣ BAKE UNTIL BUBBLY
Bake uncovered for 30–35 minutes, or until hot, bubbly, and lightly golden around the edges.
6️⃣ LET IT REST
Allow the casserole to sit for about 5 minutes before serving.
That gives the creamy mixture a chance to settle while you get everyone to the table.
✨ EASY WAYS TO MAKE IT YOUR OWN
🌶️ Add diced jalapeños for a little heat.
🥓 Stir in cooked, crumbled bacon for a smoky twist.
🧀 Swap cheddar for Monterey Jack or pepper Jack.
🌿 Sprinkle fresh parsley or chives over the top.
🍯 Add a tiny drizzle of honey if you love a sweeter corn casserole.
💡 A LITTLE TIP
If you're using frozen corn, thaw and drain it first so excess water doesn't make the casserole too loose.
And if you're using canned corn, drain it really well.
❤️ THE KIND OF SIDE DISH EVERYONE REMEMBERS
Corn is already delicious on its own, but something happens when you combine it with cream cheese, butter, and melted cheddar.
It turns into the kind of warm, creamy side dish that makes people go back for just one more spoonful…
And then somehow their plate is full again. 😂🌽
