🛒 What You’ll Need
🍓 2 cups sliced fresh strawberries
🍪 2 sleeves graham crackers
🧀 8 oz cream cheese, softened
🍚 ½ cup powdered sugar
🌿 1 teaspoon vanilla extract
🥛 1½ cups cold heavy whipping cream
🍚 2 tablespoons powdered sugar, for the whipped cream
Optional: A little extra whipped cream and sliced strawberries for decorating. 🍓✨
👩🍳 How to Make It
1️⃣ Prepare the Strawberries
Wash and dry the strawberries well, then remove the stems and slice them.
Set aside a few of the prettiest slices for decorating the top.
2️⃣ Make the Creamy Filling
Beat the softened cream cheese with ½ cup powdered sugar and vanilla until completely smooth and creamy.
In a separate bowl, whip the cold heavy cream with the remaining powdered sugar until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture.
Try not to overmix—you want that filling light and fluffy. ☁️
3️⃣ Start Layering
Spread a thin layer of the cream cheese mixture across the bottom of a 9x13-inch dish.
Place a single layer of graham crackers over the filling.
Break a few crackers if necessary to fill the gaps.
4️⃣ Add Strawberries
Spread another layer of the cream cheese mixture over the graham crackers.
Add a generous layer of sliced strawberries.
🍓 Then repeat the layers:
Graham crackers → cream filling → strawberries
Finish with a layer of the creamy filling on top.
5️⃣ Decorate
Arrange the reserved strawberries over the top.
You can also add a few little swirls of whipped cream for an extra-pretty finish. 🍓🤍
6️⃣ Chill — This Is the Important Part!
Cover the dish and refrigerate for at least 6 hours, preferably overnight.
This gives the graham crackers time to soften and absorb some of that delicious creamy filling.
That's when the magic happens. ✨
💡 A Little Tip
Don't rush the chilling time!
The dessert may look delicious after an hour or two, but the texture gets so much better when it has plenty of time to set.
And make sure your strawberries are well dried after washing. Too much extra moisture can make the layers watery.
🍓 Want to Change It Up?
🍫 Add a drizzle of melted chocolate over the top.
🍋 Mix a little lemon zest into the cream cheese filling for a fresh twist.
🫐 Add blueberries for a beautiful strawberry-blueberry version.
🍪 Try vanilla wafer cookies instead of graham crackers.
🥥 Sprinkle toasted coconut over the top for a tropical touch.
❤️ The Dessert That Disappears First
There's something wonderfully old-fashioned about an icebox cake.
You don't need fancy decorating skills.
You don't need to be an expert baker.
You simply layer a few good ingredients, put the dish in the refrigerator, and let time do the work.
Then you bring it to the table…
And suddenly, everyone wants the corner piece. 😂🍓
💬 Your Turn!
Would you make this with:
🍓 Strawberries only?
🍓🫐 Strawberries and blueberries?
🍫 Strawberries and chocolate?
Or would you keep it classic?
