✨ BLUEBERRY CREAM CHEESE LOAF ✨

→ LET’S BAKE THIS BEAUTIFUL LOAF! ♥

STEP 1 — PREPARE YOUR PAN

Preheat your oven to 350°F (175°C). Grease a 9 × 5-inch loaf pan and line it with parchment paper, leaving a little overhang to make lifting the loaf out easier.

STEP 2 — MIX THE DRY INGREDIENTS

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

STEP 3 — CREAM THE BUTTER AND SUGAR

In a large bowl, beat the softened butter and sugar until light and fluffy, about 2–3 minutes.

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

STEP 4 — FINISH THE BATTER

Add the dry ingredients in two additions, alternating with the sour cream. Mix gently just until combined.

If the batter seems unusually thick, add the tablespoon of milk. Avoid overmixing, as this can make the loaf dense.

Toss the blueberries with 1 teaspoon of flour, then gently fold them into the batter. If using frozen blueberries, add them straight from the freezer.

STEP 5 — MAKE THE CREAM CHEESE FILLING

In a separate bowl, beat the softened cream cheese with the sugar until smooth.

Mix in the egg yolk and vanilla extract until creamy and well combined.

STEP 6 — LAYER THE GOODNESS

Spread about half of the blueberry batter into the prepared loaf pan.

Spoon the cream cheese mixture evenly over the batter, keeping it slightly away from the edges where possible.

Carefully spread the remaining blueberry batter over the filling. Use a knife to gently swirl the top layer a little, but don't mix the cream cheese completely into the batter.

STEP 7 — BAKE UNTIL GOLDEN

Bake for approximately 55–70 minutes, until the top is golden and a toothpick inserted into the cake portion comes out clean or with a few moist crumbs. Avoid testing only the cream cheese center.

If the top browns too quickly, loosely cover it with foil for the remaining baking time.

Let the loaf cool in the pan for about 20 minutes, then carefully transfer it to a wire rack.

STEP 8 — ADD THE FINISHING TOUCH

For the optional glaze, stir the powdered sugar with lemon juice a little at a time until smooth and drizzle-able.

Once the loaf has cooled completely, drizzle the glaze over the top. Let it set before slicing.

Now pour yourself a cup of coffee or tea and enjoy a slice of homemade blueberry bliss! ♥

✧ LITTLE SECRETS FOR THE PERFECT LOAF ✧

★ Use room-temperature ingredients. Softened butter, cream cheese, and eggs blend more evenly.

★ Don't overmix. Stir only until the flour disappears for a tender crumb.

★ Keep those blueberries in place. A light coating of flour can help distribute them throughout the batter.

★ Be patient while it cools. The cream cheese layer needs time to set, making the loaf easier to slice.

★ Want a brighter flavor? Add 1 teaspoon of lemon zest to the batter. Blueberries and lemon are a wonderful combination!

♥ HOW TO SERVE AND STORE IT

Serve slices plain, dusted with powdered sugar, or finished with the lemon glaze. This loaf is lovely for brunch tables, afternoon visitors, weekend breakfasts, and homemade gifts.

Because of the cream cheese filling, refrigerate leftovers in an airtight container within 2 hours of baking. Enjoy within 3–4 days, and let individual slices sit out briefly before serving if you prefer them less chilled.
