✨ Classic Southern Potato Salad ✨

→ LET'S MAKE IT! ♥

1. Prepare the potatoes.

Wash the potatoes thoroughly.

Peel them if desired, then cut them into evenly sized, approximately 1-inch chunks.

Place the potatoes in a large pot and cover with cold water by about an inch. Add a little salt.

Bring to a boil, then reduce the heat and simmer for approximately 10–15 minutes, or until the potatoes are fork-tender but still hold their shape.

2. Cook the eggs.

While the potatoes cook, place the eggs in a saucepan and cover them with water.

Bring to a boil, then cover the pan, remove it from the heat, and let the eggs stand for about 10–12 minutes.

Transfer them to an ice-water bath to cool.

Peel the eggs and chop them into small pieces.

3. Drain and cool the potatoes.

Once tender, drain the potatoes carefully.

Let them cool for about 15–20 minutes, until they're no longer steaming heavily but are still slightly warm.

This helps them absorb the dressing without becoming mushy.

4. Make the Southern-style dressing.

In a large mixing bowl, whisk together the mayonnaise, yellow mustard, apple cider vinegar, sugar, salt, black pepper, and paprika.

Stir until smooth and creamy.

Taste and adjust the mustard, vinegar, or seasoning according to your preference.

5. Add the vegetables and eggs.

Add the diced celery, yellow onion, and drained sweet pickle relish to the dressing.

Gently fold in the chopped eggs.

6. Bring everything together.

Add the cooled potatoes to the bowl.

Using a large spoon or spatula, gently fold everything together until the potatoes are evenly coated.

Try not to mash them too much. A little texture makes this potato salad especially lovely.

7. Chill before serving.

Cover the bowl and refrigerate for at least 2 hours to allow the flavors to blend.

Before serving, give the salad a gentle stir and sprinkle the top with paprika and fresh parsley if desired.

Serve chilled and enjoy every creamy, flavorful bite! ♥

✧ LITTLE SECRETS FOR THE BEST SOUTHERN POTATO SALAD

✓ Choose the right potatoes. Yukon Gold potatoes are creamy and hold their shape beautifully. Red potatoes are another excellent choice.

✓ Start with cold water. Adding potatoes to cold water helps them cook more evenly.

✓ Don't overcook the potatoes. They should be tender enough for a fork to slide through but not falling apart.

✓ Dress them while slightly warm. This helps the potatoes absorb some of the tangy dressing.

✓ Chop the vegetables finely. Small pieces distribute their flavor throughout the salad without overpowering the potatoes.

✓ Let it chill. A few hours in the refrigerator makes a wonderful difference in flavor.

✓ Adjust the mustard to taste. Add a little more if you enjoy a stronger Southern-style tang.

✓ Save a little paprika for the top. It gives the finished salad that familiar, beautiful presentation.

❀ WHAT TO SERVE WITH IT

This classic side dish pairs wonderfully with:

✓ Southern fried chicken

✓ Barbecue ribs

✓ Grilled burgers

✓ Pulled pork sandwiches

✓ Baked beans

✓ Grilled sausages

✓ Corn on the cob

✓ Crispy fried fish

♥ MAKE-AHEAD & STORAGE TIPS

Make ahead: Prepare the potato salad a day in advance. Keep it covered in the refrigerator and add the final paprika garnish just before serving.

Refrigerate: Store in an airtight container at 40°F (4°C) or below for up to 3–4 days.

Serving safely: Don't leave potato salad at room temperature for more than 2 hours, or more than 1 hour when the temperature is above 90°F (32°C). For outdoor gatherings, keep it nestled in a bowl of ice.

Freezing: Freezing isn't recommended. The potatoes can become grainy, and the mayonnaise dressing may separate after thawing.
