Creamy Roasted Red Onion Dip 🧅✨

Instructions

1. Roast the onions

Preheat the oven to 400°F (200°C). Place the red onion wedges and unpeeled garlic cloves on a baking tray. Drizzle with olive oil, then season with salt, black pepper, and thyme. Toss to coat.

Roast for 30–35 minutes, turning the onions halfway through, until soft, golden at the edges, and lightly caramelized. Allow to cool for 5–10 minutes. Squeeze the roasted garlic out of its skins.

2. Prepare the creamy base

In a medium bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until smooth and creamy. Add the lemon juice and onion powder, stirring until evenly incorporated.

3. Blend the roasted onions

For a smooth dip, place the roasted onions and garlic in a food processor and pulse until finely chopped or mostly smooth. For a chunkier texture, chop them by hand.

4. Combine everything

Fold the roasted onion mixture into the creamy base. Stir in the fresh chives, then season with additional salt and black pepper to taste.

5. Chill and develop the flavor

Cover and refrigerate for at least 30 minutes before serving. Chilling allows the roasted onion flavor to blend beautifully with the creamy ingredients.

6. Garnish and serve

Transfer to a serving bowl. Garnish with chopped chives, a light drizzle of olive oil, smoked paprika, or crispy fried onions.

Serve with potato chips, crackers, toasted baguette slices, pita chips, or fresh vegetables.

Tips for the Best Dip

  • For deeper flavor: Roast the onions until the edges are golden and caramelized, without burning them.
  • For extra creaminess: Make sure the cream cheese is softened before mixing.
  • For a lighter texture: Replace some of the mayonnaise with additional sour cream or plain Greek yogurt.
  • For extra flavor: Add a pinch of smoked paprika or a dash of Worcestershire sauce.
  • For a chunky dip: Reserve a few roasted onion pieces and stir them in just before serving.

Storage

Store the dip in an airtight container in the refrigerator for 3–4 days. Stir before serving. Do not leave it at room temperature for more than 2 hours, and avoid freezing it, as the dairy base may separate after thawing.

Enjoy this creamy, sweet-and-savory roasted red onion dip!
