And the best part? You only need three ingredients!
✦ WHAT YOU'LL NEED
✓ 2 cans (about 14–15 oz / 400–425 g total) pink salmon, drained and flaked, with skin and bones removed if preferred
✓ 2 large eggs
✓ ½ cup (about 50 g) almond flour
Optional seasonings: Salt, black pepper, garlic powder, or fresh dill. These are extras, so leave them out if you want to keep the recipe strictly to three ingredients.
→ LET'S MAKE THEM! ♥
1. Prepare the salmon.
Drain the canned salmon thoroughly and transfer it to a medium mixing bowl. Flake it with a fork, removing any skin or bones if desired.
2. Add the eggs.
Crack the eggs into the bowl and mix them with the salmon until everything is evenly combined.
3. Mix in the almond flour.
Add the almond flour and stir until the mixture holds together when pressed. If it feels too wet, add another tablespoon of almond flour.
4. Shape the patties.
Divide the mixture into 6–8 portions. Shape each portion into a small patty about ½ inch thick.
5. Heat the skillet.
Add a little olive oil or avocado oil to a nonstick skillet and heat over medium heat.
6. Cook until golden.
Place the patties in the skillet without overcrowding. Cook for about 3–4 minutes per side, until golden brown and heated through. Because the salmon is already cooked, you're mainly setting the egg mixture and crisping the outside.
7. Serve and enjoy!
Transfer the patties to a plate and let them rest briefly. Serve warm with lemon wedges, fresh herbs, or your favorite low-carb sauce.
