🧀🌶️ Baked Pimento Cheese Dip — Creamy, Cheesy & Perfect for Sharing!

🛒 What You’ll Need

🧀 8 oz cream cheese, softened

🧀 1 cup shredded sharp cheddar cheese

🧀 1 cup shredded Monterey Jack cheese

🌶️ 4 oz jar diced pimentos, drained

🥄 1/2 cup mayonnaise

🧄 1/2 tsp garlic powder

🌿 1/2 tsp onion powder

🌶️ 1/4 tsp smoked paprika

🧂 Salt and black pepper, to taste

For the top:

🧀 1/4 cup extra shredded cheddar

🌿 A little chopped green onion or parsley, optional

👩‍🍳 How to Make It

1️⃣ Get the oven ready

Preheat your oven to 375°F.

Lightly grease a small baking dish or oven-safe skillet.

2️⃣ Mix everything together

In a large bowl, combine the softened cream cheese, mayonnaise, shredded cheddar, Monterey Jack, and drained pimentos.

Add the garlic powder, onion powder, smoked paprika, salt, and black pepper.

Mix until everything is creamy and well combined. 🧀🌶️

3️⃣ Into the baking dish

Spoon the mixture into your prepared baking dish and spread it into an even layer.

Sprinkle the extra cheddar over the top for that beautiful golden, bubbly finish. ✨

4️⃣ Bake until bubbly

Bake for about 20–25 minutes, or until the dip is hot, creamy, and bubbling around the edges.

For an extra golden top, you can place it under the broiler for 1–2 minutes at the end. Keep a close eye on it!

5️⃣ Garnish and serve

Let the dip rest for a few minutes before serving.

Sprinkle with chopped green onions or fresh parsley if you like.

Then bring out the crackers and start dipping! 😋

✨ Make It Your Own

🌶️ Add diced jalapeños for a little heat

🥓 Stir in crispy cooked bacon

🧄 Add a little extra garlic

🌿 Mix in chopped green onions

🥨 What to Serve With It

🥨 Pretzels

🥔 Potato chips

💡 A Little Tip

Make sure your cream cheese is softened before mixing. It will blend much more smoothly with the other ingredients and give you that wonderfully creamy texture.

And don't skip draining the pimentos—too much extra liquid can make the dip watery.
