🛒 WHAT YOU’LL NEED
🥔 4 cups frozen hash browns, thawed
🥩 2 cups diced cooked ham
🧀 1½ cups shredded Swiss cheese
🥚 6 large eggs
🥛 1½ cups evaporated milk
🧅 1/2 cup diced onion
🫑 1/2 cup diced green bell pepper
🧂 1/2 teaspoon salt
🌑 1/4 teaspoon black pepper
👩🍳 HOW TO MAKE IT
1️⃣ Prepare the pan
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
2️⃣ Build the first layer
Spread the thawed hash browns evenly across the bottom of the dish.
3️⃣ Add the filling
Sprinkle the diced ham, onion, and bell pepper evenly over the potatoes. Top with the shredded Swiss cheese. 🧀
4️⃣ Whisk the eggs
In a large bowl, whisk together the eggs, evaporated milk, salt, and black pepper until well combined.
5️⃣ Pour and bake
Pour the egg mixture evenly over the casserole.
Bake uncovered for 45–55 minutes, or until the center is set and the eggs reach 160°F (71°C).
6️⃣ Let it rest
Allow the casserole to rest for about 5–10 minutes before slicing and serving.
✨ WANT TO MAKE IT YOUR OWN?
🥓 Swap the ham for cooked bacon or sausage.
🧀 Use cheddar, Monterey Jack, or Pepper Jack instead of Swiss.
🍅 Add diced tomatoes for a fresh pop of flavor.
🌶️ Toss in chopped green chiles for a little heat.
🌿 Sprinkle fresh chives or parsley over the top before serving.
💡 A LITTLE TIP
Want to make breakfast easier? Assemble the casserole the night before, cover it tightly, and refrigerate. Let it sit at room temperature briefly while the oven preheats, then bake until the center is fully set.
