🛒 What You’ll Need

🥒 1 1/2 cups finely grated zucchini

🌾 1 1/2 cups all-purpose flour

🍚 3/4 cup granulated sugar

🧈 1/2 cup unsalted butter, melted

🥚 2 large eggs

🌿 1 tsp vanilla extract

🥄 1 tsp baking powder

🥄 1/2 tsp baking soda

🧂 1/2 tsp salt

🌿 1 tsp ground cinnamon

🥛 2 tbsp milk, if needed

Optional additions:

🌰 1/2 cup chopped walnuts or pecans

🍫 1/2 cup chocolate chips

1️⃣ Get the oven ready

Preheat your oven to 350°F.

Grease and line an 8×8-inch baking pan with parchment paper, leaving a little overhang for easy removal.

2️⃣ Prepare the zucchini

Finely grate the zucchini.

If it seems especially watery, gently squeeze out some of the excess moisture with a clean kitchen towel or paper towels. You want the zucchini moist, but not dripping wet. 🥒

3️⃣ Mix the wet ingredients

In a large bowl, whisk together the melted butter and sugar.

Add the eggs and vanilla and whisk until smooth and well combined.

4️⃣ Add the dry ingredients

In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

Gradually add the dry ingredients to the wet mixture, stirring just until combined.

Fold in the grated zucchini.

If the batter seems unusually thick, add a tablespoon or two of milk.

🌰 If you’re using nuts or chocolate chips, gently fold them in now.

5️⃣ Bake until golden

Spread the batter evenly into the prepared pan.

Bake for approximately 30–38 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.

Try not to overbake—the zucchini helps give this cake its lovely, tender texture. ❤️

6️⃣ Cool and serve

Let the cake cool in the pan for about 15–20 minutes, then lift it out using the parchment paper.

Let it cool completely before slicing.
