Dump Stuffing Mix, Ground Beef, and Just 3 More Ingredients Into Your Slow Cooker for an Easy Family Dinner

When you're looking for a hearty meal that doesn't require a sink full of dishes or a complicated prep routine, this Slow Cooker Poor Man's Independence Loaf is a dependable favorite. With only five simple ingredients, you can layer everything into the slow cooker and let it do the hard work while you get on with your day.

The dry stuffing mix is the secret ingredient, replacing both breadcrumbs and many of the seasonings you'd normally need. Combined with seasoned ground beef, creamy soup, eggs, and ketchup, it creates a tender, flavorful loaf that's reminiscent of classic homemade meatloaf—but with far less effort.

Pair it with mashed potatoes, green beans, roasted vegetables, or sweet corn for a comforting dinner everyone will enjoy. Leftovers are just as delicious, making excellent sandwiches or quick lunches the next day.
