Tips and Variations
For an even richer flavor, replace half of the water with low-sodium chicken broth. It adds extra depth while keeping the recipe simple and traditional.
If Irish-style sausages are unavailable, choose a mild, high-quality pork sausage. Avoid strongly seasoned or spicy varieties to keep the classic Dublin coddle flavor.
For easy meal prep, brown the sausages and bacon and slice the potatoes and onions the night before. Store everything separately in the refrigerator, then simply layer the ingredients into the slow cooker the next morning.
Prefer a thicker coddle? Use slightly less water and keep the slow cooker covered throughout cooking so the broth stays concentrated.
Need to feed a larger crowd? Add a few extra potatoes and sausages, but avoid filling the slow cooker more than three-quarters full. Leftovers reheat beautifully on the stovetop with a splash of water added to loosen the broth, making this a perfect make-ahead meal for busy weekdays.
