Slow Cooker 4-Ingredient Dublin Coddle

Ingredients
- 1½ to 2 pounds pork sausages (Irish-style bangers or mild pork sausages, about 8–10)
- 8 ounces thick-cut bacon, chopped into 1-inch pieces
- 2 pounds potatoes, peeled and sliced into ½-inch rounds
- 2 large yellow onions, peeled, halved, and sliced into thick wedges
- 1 to 1½ cups hot water, or enough to reach halfway up the ingredients
- Freshly ground black pepper, optional
- Fresh chopped parsley, optional for garnish
Instructions
Brown the sausages
Heat a large skillet over medium heat and lightly brown the sausages on all sides, about 5 minutes. They do not need to cook completely through—this step simply adds extra flavor and a beautiful golden color. If you are short on time, you can skip this step.
Cook the bacon
Using the same skillet, add the chopped bacon and cook for 3–4 minutes until some of the fat has rendered and the edges begin to brown. The bacon does not need to become crispy. Remove from heat and set aside.
Build the slow cooker layers
Spread half of the sliced potatoes across the bottom of a 5- to 6-quart slow cooker. Add half of the onions on top and season lightly with black pepper if desired.
Scatter half of the bacon over the onions, then arrange the browned sausages evenly over the top.
Add the remaining onions, followed by the rest of the bacon. Finish with the remaining potatoes, spreading them evenly across the surface.
Add the liquid
Slowly pour the hot water down the side of the slow cooker, being careful not to disturb the layers. The liquid should reach about halfway up the ingredients. As the coddle cooks, the vegetables and meat will release their own juices, creating a flavorful broth.
